Chinese food is classified into many different kitchen, there are models that recognize up to 10 different. The classifications are depending on ingredients and cooking methods, examples are Lu, Yang and Hunan, they in its turn can be classified into various sub kitchens. Over the millennia distinct ideas have developed how ingredients should be mixed, treated, cooked and seasoned. Northern Chinese Cuisine
Is based on wheat, examples on common foods are: noodles, pancakes, steamed buns. The quite liberal use of garlic and oil is also typical.
Southern Chinese Cuisine
Is based on rice. The food is in general quite spicy and some times sweet. The cooking style has a lot in common with what you find in say Thailand; fresh vegatables and meat cooked fast to preserve crispyness. Many times considered to be healthier than the Northern variety though it can be discussed.

Agriculture
In the north millet was the first main crop, wheat was introduced around 1500BC and with time took over. In the more humid south rice was the main crop and still is today, although it is argued that millet and barley long was more dominant since big scale rice farming is difficult to achieve. Where millet and wheat was grown agriculture looked pretty much like in Europe, in the rice regions it was very different - there water buffaloes and complex man powered irrigation systems were used.
Vegetables And Fruit
Examples of legumes and vegetables they ate are: cucumber, onions, garlic, cabbage, soybeans, bamboo sprouts, turnips and yams. Examples of fruits are: oranges, peaches, pears, apples, apricots, and lemons. Various types of nuts was also consumed.
Meat and Fish
In ancient Chinese food meat was not a big protein source and only consumed in small quantities. Pork was by far the most common and is domestic to China. Chicken is believed to have been brought from Thailand and quickly became one of the more common protein sources, both from eggs and the meat. Fish and seafood was staple, cultivation of carp happened already in the first centurys AD. The meat substitute "tofu", a product derived from soja, started to become common the first centurys AD. As you can see there is a wide variety in ancient Chinese food, early plants and foods was imported and thus created a big diversity. China was early on a great importer and exporter of wares, foods and culture.
Rice
By 5000BC rice was already being cultivated along the river Yangtze Kiang in China. The first methods probably didn´t give a high yield but through the millennia it evolved into methods still used today. It employs water irrigation and drowning of the plants, not only does rice grow faster in water, it also protects it from pests and deters weed.
Noodles
In an excavation in northwestern China a millet noodle from around 2000BC is supposed to have been found. Many other scientists dispute this ancient noodle, they claim the noodle is "only" about 2000 years old. However today it is staple food in many countries all over the world - Italy, Germany, Japan are examples. They can be based on many foods like potatoes, wheat, beans and rice.
Beverages
Sometime in the beginning of the first milennium AD the custom of drinking hot water soaked in certain leaves was born - Tea. It quickly became very popular and was associated with finesse and education. Grape wine existed but it was rice and millet wine that by far was most popular. They early on adapted the habit of drinking fruit juices.
Spices and Seasoning
Curiously is how the visual is important in the different dishes, not only flavour but appearance and colour also decide what is in a dish. They had deep knowledge in flavours and how to balance them. In ancient Chinese food they used (and still use) pepper, cinnamon, garlic, ginger and sesame oil for seasoning. Various types of condiment sauces were also inevneted, an example is the sweet and rich "hoisin sauce".
Cooking And Food Preservation
Various methods were used for cooking; steaming and stir frying is believed to be Chinese inventions. Many preparation methods are fast or do not require heat at all, this a result of scarce supply of firewood. For preservation the common people mainly used salting, pickling, fermenting and drying while the wealthier also could use ice.
